    A comparative analysis of sensory and chemical properties of grape rakija from different Macedonian producers

    Rakija is a strong alcoholic beverage, deeply rooted in Macedonian cultural heritage, where quality varies significantly between industrial, small-scale, and traditional home producers. This study evaluated sensory and chemical differences among three types of producers using 30 samples of rakija from grapes (10 per group). The chemical analysis included gas chromatography (GC) for volatile compounds and analytical methods for alcohol content, specific gravity, and extract. The sensory analysis was performed by a trained panel (6 assessors) following OIV 100-point scoring scale. Spearman’s rank correlation was used for statistical data analysis. Sensory results revealed greater variability in odour and taste (CV 14–29%). Isobutanol showed a significant negative correlation with quality (ρ = -0.43 to -0.46, p < 0.017), while extreme variability in esters (CV >100%, ethyl acetate up to 5,654 mg/L) and furfural (CV 383%) was detected. In contrast, the extract content positively influenced the balance (ρ = 0.43–0.50, p < 0.017) in all of the samples. Between the producer’s groups, the traditional samples had more unpleasant aromas due to improper distillation and fermentation, as confirmed by the chemical analysis results where ethyl acetate reached up to 5,654 mg/L. Routine sensory-chemical correlations can aid quality assessment, linking traditional heritage with modern distillation methods in Macedonian rakija production.

    INFLUENCE OF FOLIAR FERTILIZING ON YIELD AND QUALITY OF THE TABLE GRAPE cvs. CARDINAL AND AFUS ALI

    During three consecutive years (2012-2014) an experiment has been conducted with an aim to determine the influence of the foliar fertilization on yield and quality of table grapes, cvs. Cardinal and Afus ali. The experimental site has been established in Tikvesko Vinogorje, at vineyards of AD ,,Goce Delcev,, location’s Trstenik, Kavadarci. The experiment has been conducted according the method of random block system with seven variants and three repetitions. The foliar fertilizers with different nutrient contents were applied in concentration of 0.5 %, four times during the growing period, at the stages: before and after blooming, buckshot berries and verasion. The following characteristics were investigated: content of macro and micro nutrients in leafs and shoots, yield, mechanical analyse of grape grains and chemical properties of must. On the base of the results gained, we can bring the following conclusion: foliar fertilization with a different content of macro and micro nutrients, aplicated in the same concentration and growing stages, showed biological justification in terms of increasing the content of macro and micro elements in the leaves and shoots, yield and the quality of the grape cardinal and afus ali. In both studied varieties the highest average yields has been achieved in variant 4 (Polyfeed GG 18-9-27 + 2MgO + ME). With the cultivar cardinal, the average yield is 5,23 kg/vine and 17,01 t/ha, which is significantly higher than control variant with increasing index of 25 %. The highest average yields with variety afus ali were 5,23 kg/vine and 20,66 t/ha, with a statistically significant difference from the control variant, on the level of probability P≤0,05 and P≤0,01, with increasing of 28 %. Foliar application of this fertilizer on both varieties leaded to the highest content of macro and microelements in the leaves and shoots, best grapes quality and the highest sugar content in the must.

    Factors Influencing Rural Youth Migration in North Macedonia

    The migration of young people from rural to urban areas poses a significant challenge to the sustainable development of rural communities in North Macedonia, leading to an aging population and diminished natural growth. This trend exacerbates socioeconomic inequalities, fostering social insecurity and the exclusion of rural youth. The far-reaching consequences of this migration influence both urban and rural landscapes across various developmental domains. To that end, this research aims to investigate the impact of main socioeconomic factors on rural youth migration. A survey of 550 rural residents aged 18-40 addressed was conducted using a tailored questionnaire. The data collection approach ensured nationwide diversity across all Macedonian planning regions, nationalities, genders and village types. Data processing involved the application of standard descriptive analysis and a binary logistic regression approach. Key findings show that factors such as gender, marital status, region, nationality, education, employment and having family agricultural holdings do not significantly impact rural youth migration. On the contrary, having children, household size, perceptions of employment opportunities, urban or rural lifestyle preferences and overall rating the quality of life in rural areas exhibit notable significance. These findings contribute to a greater understanding of the complexities surrounding rural youth migration. In conclusion, the logistic regression model serves as a powerful tool to pinpoint crucial factors influencing rural youth migration. These insights provide a solid foundation for shaping targeted policies, essential for retaining and supporting rural youth and fostering sustainable development in both urban and rural areas of North Macedonia.

    Abstract In agricultural production, and in the specific case in viticulture production, the production of healthy food, that is the production of healthy plants and healthy and quality fruits, and especially the production of virus-free planting material, is still an actual problem. Global pollution has contributed to finding different innovative solutions in the production of healthy food and also in agricultural production and specifically in our trials in viticulture production, it is still very current of healthy and resistant plants and animals. In addition to the application of genetics and the selection of varieties, the choice of nutrition for the plant and the choice of soil improvers (part of the medium where the plant grows) are very significant in the problem. In particular, our investigations are aimed at improving the properties of the soil during the cultivation of rootstocks (mother plants) in viticulture production. The tests were carried out in the period 2017 - 2019, in the Skopje Vineyard. Grapevine rootstocks introduced in the Republic of North Macedonia were randomly selected. A significant segment in this treatment is that our "new formula" of the mineral zeolite, which is currently being tested in our laboratory, was used. This agent has proven to be very safe for use as a preparation for improving the properties of the soil, and also as an effective agent for protecting and improving the resistance of the grapevine rootstocks to diseases and pests. The treated plants had a better habit and better resistance to external conditions. This preparation is very suitable for use in organic production.

    IDENTIFICATION OF SOME AUTOCHTHONOUS AND REGIONAL GRAPEVINE VARIETIES ACCORDING TO O.I.V. DESCRIPTORS FOR CERTAIN CHARACTERISTICS

    ABSTRACT Our studies included some autochthonous and regional grape varieties grown in the Republic of North Macedonia. The autochthonousvarieties were examined -White winter, Konchanka, Stanushina, Ohrid black and Ohrid white, and the regional varieties -Vranec, Prokupec, Smederevka, Zilavka and Zupljanka were examined.The tests were divided into three methodological units. The first method was applied to all varieties -data collection, history and comparison with other tests.The second method was performed on all varieties -ampelographic identification because we had samples from all varieties. In some of the varieties, the third method was performed, that is, genetic (DNA) identification was made in the period from 2010 to 2020 in different examination centers and at different times. The results are compared with the results of a study by Professor M. Aradhya of the USDA Research Center, Davis CA, USA. He has performed a wide range of genetic identification on a number of autochthonous varieties in Europe and Asia, including varieties in the Balkans.With the second method of examination -ampelographic identification according to O.I.V. descriptors we got the most realistic results. An ampelographic description of certain characteristics of the individual organs of the vine was performed and it was concluded that the varieties according to their anatomical and physiological characteristics belong to 2 groups: ecological-geographical group Black Sea varieties, subgroup Balcanica and ecological-geographical group Eastern varieties, subgroup Antasiatica.

    EXAMINATION OF THE PHENOTYPIC VARIABILITY OF THE MUSCAT HAMBURG VARIETY INTHE SKOPJE VINEYARD AS A BASIS FOR ISOLATING CLONES

    ABSTRACTThis paper describes the experiments performed on the Muscat Hamburg variety in the Skopje vineyard. Initial examinations were made in 2013-2014 in the collection plantations of the Agricultural Institute where the Muscat Hamburg variety was grown. In the then plantation were found 3 individual grapevines(units)in which differences in morphological and physiological characteristics were identified.Such grapevines are marked as individuals, monitored and taken from them for propagation material (they are vegetatively propagated by individual producers, and the seeds are used for laboratory tests). In fact, the phenotypic variability of the variety was monitored. In the following years, from 2013-2019, phenotypic variations were observed in other individualplantations and individual grapevines in the conditions of the Skopje vineyard.Most of the changes in the individual units of the Muscat Hamburg variety are manifested in the bunch, grain, fertilization, phenology, frost resistance and some technologicalcharacteristics. For example, in these units the grape is more compact, with better fertilization, darker color, the phenological feature of maturation takes place earlier and so on. Freezing resistance of these units is higher.They have the potential for better technological characteristics that would be used further for better product quality -wine, spirits and more.These units are the basis for obtaining improved properties in clonal selection and hybridization.
