Item type:Publication, EVALUATION OF NITRITE AND NITRATE CONTENT IN MEAT PRODUCTS AVAILABLE ON THE MACEDONIAN MARKET(Institute of Knowledge & Management is a scientific, educational, research and consultant institution formed in Skopje, RM., 2024) ;Belichovska DanielaSilovska Nikolova AleksandraIn recent years, there has been increasing discussion about the harmful effects of added nitrites and nitrates in processed meat products. For these reasons, consumers are increasingly focused on consuming meat products with reduced nitrite content. The aim of the present research was to determine the content of nitrites and nitrates in commercial meat products available on the Macedonian market. A total of 120 samples were analyzed, including 12 samples of dry sausages, 20 samples of boiled sausages, 20 samples of semi-dry sausages, 24 samples of meat chunk sausages, 24 samples of semi-dry cured meat products and 20 samples of dry-cured meat products. The determined content of nitrites and nitrates in the tested meat products was in accordance with legal regulations. Monitoring the levels of nitrites and nitrates in meat products is necessary to ensure safe final products on the Macedonian market. - Some of the metrics are blocked by yourconsent settings

Членството во Светската трговска организација (СТО) ги обврзува одговорните за македонската земјоделска политика на олеснување на трговијата со земјоделски производи. Досегашниот трговски режим, со особена заштита на домашниот пазар, значајно се менува. Неопходно е прилагодување на македонските земјоделци на новонастанатите услови за да си обезбедат конкурентност на пазарот. Настојувањата за членство во ЕУ, што последните случувања го прават реално во поскоро време, ќе донесат ново опкружување за земјоделците и нова политика за спроведување. Предвидувањето на ефектите од сите овие промени е цел на овој труд, за што е изграден модел на парцијална рамнотежа со анализа на три можни сценарија: ефектите од членството во СТО како и две сценарија во однос на пристапот во ЕУ. The nutritional value of eggs is greatest in the first few days after hatching. But in practice, there is often a need to store the eggs for a long time, thus they get older and gradually lose their high nutritional value. For long periods of storage, the eggs are cooled and stored under certain conditions. The cooling procedure and the keeping manner of the cooled eggs until the sale are presented in this study. In order to avoid the bedewing of eggs the cooling should be carried out carefully. In the beginning of cooling, the temperature in the chamber should be 2-3°C lower than that of the eggs, and then gradually to decrease (by 1°C every 2 to 3 hours). Cooling the eggs ends when its temperature reaches 2°C and then they are transferred to the storage chamber. Cooled eggs are stored in air-conditioners at a temperature of 0.5 to 2°С and relative humidity 8588%. Air circulation should be moderate and even in the entire chamber. Before putting into circulation (turnover, treade), cooled eggs are placed in air-conditioned chambers in which the air temperature rises by 10°C every 2 - 3 hours until it is 2-30С lower than the temperature of the outer air, in order to avoid spilling eggs, and the air change over the course of 24 hours is gradually increasing. If the cooling, storage, and warming procedure was correct, the eggs may be kept in good condition for two weeks after extracting the refrigerator. - Some of the metrics are blocked by yourconsent settings

It is a small endemic trout which represents expressively a lake and depth type of fish. It feeds mainly on zooplankton, and benthic fauna elements. Historical data for the study of Ohrid belvica, its systematic background, basic features and data on the fish quantity caught in the past are presented. - Some of the metrics are blocked by yourconsent settings

Item type:Publication, MORFOMETRISKI KARAKTERISTIKI, MASOV SOSTAV I ISHRANA NA OHRIDSKATA BELVICA (ACANTHOLINGUA OHRIDANA, STEINDACHNER)(Fakultet za zemjodelski nauki i hrana, Skopje, 2010-06-10)Katerina BelichovskaSo cel da se utvrdat biometriskite i morfometriskite karakteristiki, masoviot i tkivniot sostav, osnovniot hemiski sostav na mesoto i ishranata na ohridskata belvica (Acantholingua ohridana, Steindachner, 1892), izvr{eni se istra`uvawa na edinki loveni vo periodite na vegetativnata, odnosno na reproduktivnata faza na razvitok na belvicata, na tri lokaliteti na Ohridskoto Ezero: Kali{ta, Kaneo i Ele{ec, na dlabo~ina od 45 do 70 m. Ispitanite edinki se so prose~na telesna masa od 90 do 100 g i so prose~na totalna dol`ina na teloto od 217 do 225 mm. Utvrdeno e deka vrednosta na Fultonoviot koeficient kaj belvicata, od trite ispituvani lokaliteti na Ohridskoto Ezero, e zna~ajno (R<0,05) povisoka vo vegetativnata vo sporedba so reproduktivnata faza na razvitok. Razlikite vo vrednostite na Klarkoviot koeficient se mali i statisti~ki bezna~ajni. Meristi~kite karakteristiki na belvicata mo`at da se opi{at so slednive formuli: D III–V 8–10, A III–IV 7–9, V I–II 8–9, P I 11–12, C 18 –21; l.l. 13-16‡104-115‡13-18; sp. br. 1621; vert. 4753; app. int. 28‡56 (40). Pova`nite morfometriski karakteristiki na belvicata izrazeni vo procenti od dol`inata na teloto spored Smitt iznesuvaat: standardna dol`ina na teloto 93,49, dol`ina na trupot 72,80, dol`ina na glavata 20,68, dol`ina na opa{noto steblo 16,98, najgolema visina na teloto 22,29, najmala visina na teloto 7,99, najgolema {irina na teloto 12,36, predorzalno rastojanie 41,65, postdorzalno rastojanie 37,56, preanalno rastojanie 66,88 i preventralno rastojanie 50,09. Randmanot kaj belvicata e signifikantno (R<0,05) povisok vo periodot na vegetativnata vo sporedba so reproduktivnata faza na razvitok. U~estvoto na vnatre{nite organi i oddelno na gonadite vo vkupnata masa na ribata e zna~ajno (R<0,01) pogolemo vo reproduktivnata faza, a na digestivniot trakt e signifikantno (R<0,05) pogolemo vo vegetativnata faza na razvoj na belvicata. Razlikite me|u fazite na razvitok na belvicata vo zastapenosta na mesoto i na koskite vo trupot se minimalni i statisti~ki bezna~ajni. Mesoto od belvicata sodr`i zna~ajno pove}e (R<0,01) proteini i masti, a pomalku voda vo vegetativnata vo sporedba so reproduktivnata faza na razvitok. Razlikata vo sodr`inata na mineralnite materii e nezna~itelna. Bruto i neto energetskata vrednost na mesoto e signifikantno (R<0,01) povisoka vo vegetativnata faza. Vo tekot na vegetativnata i vo tekot na reproduktivnata faza od razvitokot na belvicata dominantno mesto vo nejzinata ishrana zazema zooplanktonot, so stroga selekcija na vidot Daphnia pulex, a potoa elementi od faunata na dnoto, so najgolema zastapenost na vidovi od rodot Gammarus. Zastapenosta na elementite od bentosot e zna~itelno pogolema vo tekot na reproduktivnata otkolku vo vegetativnata faza. - Some of the metrics are blocked by yourconsent settings
Item type:Publication, Survey of DNA Microsatellites in Differen Varieties of Tomato (Lycopersicon esculentum Mill.)(University Ss. Cyril and Methodius - Skopje, Faculty of Agricultural Sciences and Food, Skopje, 2010-07-08)Miskoska-Milevska, E.DNA microsatellites are important molecular tools in determination of genetic variability among organisms. The aim of this study was survey of applicability of 12 DNA microsatellites loci in molecular characterization of 6 tomato varieties of Lycopersicon esculentum Mill.: var. grandifolium from subsp. cultum; var. cerasiforme (red and yellow), var. pruniforme and var. pyriforme from subsp. subspontaneum; and var. racemigerum from subsp. spontaneum. The standardization of PCR condition for amplification of 9 polymorphic regions was performed using appropriate primer pairs for the following loci: LECH13, LE21085, LEMDDNa, LEEF1Aa, LELEUZIP, LE20592, TMS9, LE2A11 and LECHSOD. The homozygosity of DNA isolations for locus LE20592 and locus LE2A11 was confirmed by using of DNA sequencing method. The fragment analyses was realized using Applied Biosystems DNA analyzer (ABI 3130) and GeneMapper® Software program. The data were analyzed using the specific programs POWER MARKER SOFTWARE and MEGA3. In the investigated tomato varieties, the highest number of alleles (6) was detected at locus LEEF1Aa and locus LE20592, and only one allele was detected at locus LECHSOD using fragment analyses. For all microsatellites loci in the investigated tomato varieties, the average number of detected alleles was (3,6250). Locus LECHSOD was excluded from the further statistical analyses because of its monomorphicity. In the investigated tomato varieties, three specific alleles were detected at locus LE2A11, two specific alleles were detected at locus LE20592 and per one specific allele were detected at locus LECH13, locus LEMDDNa, locus LEEF1Aa and locus LELEUZIP. For all investigated varieties, the lowest average PIC value was determinated for locus LEMDDNa (0,0601), and the highest average PIC value was determinated for locus LEEF1Aa (0,7552). Average PIC value for all 8 DNA microsatellites loci was (0,3571) and according to classification of Botstein they belong to the group of modest informative markers. In general, all DNA microsatellites showed very high genetic differentiation in the investigated varieties. In the investigated varieties, locus LEEF1Aa, locus LE20592, locus TMS9 and locus LE2A11 showed very big differentiation, locus LEMDDNa showed modest differentiation, and locus LECH13, locus LE21085 and locus LELEUZIP showed very small differentiation. Based on microsatellites loci research, analysis of molecular variance (AMOVA) showed that 25,3 % of the total variance in investigated varieties was between varieties and 74,7 % of the total variance in investigated varieties was within the varieties. The results of genetic distance according to Slatkin, in relation to investigated varieties showed that the lowest genetic distance (16,7415) was noticed between Lycopersicon esculentum subsp. subspontaneum var. cerasiforme (yellow) and Lycopersicon esculentum subsp. subspontaneum var. cerasiforme (red), and the highest genetic distance (34,9859) was noticed between Lycopersicon esculentum subsp. subspontaneum var. pyriforme and Lycopersicon esculentum subsp. cultum var. grandifolium. The results of determination of genetic distance, according to Slatkin, in relation to investigated subspecies showed that the lowest genetic distance (22,1446) was noticed between Lycopersicon esculentum subsp. subspontaneum and Lycopersicon esculentum subsp. spontaneum, and the highest genetic distance (19,7147) was noticed between Lycopersicon esculentum subsp. subspontaneum and Lycopersicon esculentum subsp. cultum. Based on the statistical data, precise dendrograms were created using MEGA3 Software program.
