Abstract
The effects of the bioprotective
culture B-2 SafePro (Lactobacillus
sakei ) on pH, weight loss,
degree of lipid oxidation and
sensory characteristics of cevapi
were investigated. It was
established that adding B-2
SafePro significantly reduces
pH, increases weight loss and
improves sensory characteristics
of cevapi. The bioprotective
culture does not significantly
effect on lipid oxidation.
